Ergolavi: Traditional Greek Almond Cookies

If you are looking for an easy Greek dessert recipe, then this ergolavi recipe is definitely a must try. So, what is ergolavi? Ergolavi (εργολάβοι) is a traditional Greek almond cookie similar to the French macaron. While macaron may contain some food coloring, ergolavi are free of any artificial ingredient. To make them you only need almonds, sugar, egg whites and vanilla extract!

You don’t have to be a master chef to make these greek almond cookies as this ergolavi recipe doesn’t require any cooking skills. It will take you only 10 minutes to prepare and 20 minutes to bake. If you want to double the pleasure, you can unite two ergolavi cookies with some strawberry or cherry jam! This is a delicious treat for your afternoon coffee or your sugar cravings.


Ergolavi – Ingredients

  • 6 cups of almonds
  • 3 cups of sugar
  • 3 egg whites
  • 2 teaspoons of vanilla

Ergolavi – Instructions

  1. Start this ergolavi recipe by blanching the almonds. In case you don’t know how to blanch almonds, you can follow the following steps:
    1. Take a small pot. Add some water and bring to boil.
    2. Place the raw almonds in the boiling water.
    3. Let the almonds boil for no more than one minute.
    4. Take a colander and drain the almonds.
    5. Rinse with cold water in order to cool them.
    6. Use your fingers and gently squeeze the almonds and loosen the skin from them.
  2. Now that you have blanched the almonds, dry them in the oven.
  3. Mash the almonds with mortar and pestle. In case you don’t have a mortar and pestle you can pulverize then in
    food blender.
  4. Take a bowl. Place sugar, egg whites, and vanilla in the bowl. Stir well the ingredients.
  5. Add the almonds to the bowl. Again, stir well the ingredients.
  6. Now, by using your fingers, blend the ingredients into a thick dough.
  7. Preheat the oven to 300°F.
  8. Take a baking pan and cover it with a buttered baking sheet.
  9. Take around one and a half of tablespoon of the dough and place on the baking tray. Add an almond in the middle of the dough. Continue this for the remaining dough.
  10. Place in the oven and bake for about 20 minutes or until they get a nice brown golden color.
  11. Allow cooling before serving.
