Pasta Flora Recipe: A Traditional Greek Jam Tart

Now that weather is getting colder, I can’t consider another ideal time to bake a pasta flora. This pasta flora recipe reminds me so much of my childhood. When my family moved back to Greece from the United States, we lived for a couple of years in Athens before finally moving to Sparta. Honestly, everything seemed bizarre when I first came to Greece. There were however a couple of pleasant moments that I still cherish. In Athens, we had a lovely neighbor, Miss Anna (God bless her soul wherever she is) who was popular for her pasta flora. Every time I visited her with my family there was a delightful piece of this mouthwatering Greek jam tart waiting for us; as a result, she was my favorite neighborhood to visit!

Pasta flora is a Greek jam tart that you decorate with strips from the dough. Even though I propose you bake this dessert in a 28 cm diameter baking pan, you can bake pasta flora in any size you desire!

To make this pasta flora recipe you need the following ingredients: butter, eggs, sugar, baking powder, vanilla extract, flour, and cherry jam. You can use any flavor you of jam you fancy. In my opinion, the best jam for pasta flora is cherry jam! However, there are those who prefer it with apricot or strawberry jam! Before you start making this pasta flora, you need to prepare the dough. You can find how to prepare the dough for the pasta flora at the instructions below.

This jam tart is completely different from any other Greek traditional dessert (for instance, galaktoboureko and baklavas). Nevertheless, this homemade dessert will delight your palate and become your favorite dessert for breakfast, brunch or coffee break.

This easy pasta flora recipe takes around 50 minutes to prepare and 30 minutes to cook.

Pasta Flora Recipe – Ingredients

For the dough

  • 2 cups of flour
  • 150 g of butter, cut into smaller pieces
  • 1 egg
  • Salt
  • 5 tablespoons of sugar
  • Extra butter and flour for covering the baking pan

For the pasta flora filling

  • 300 of butter
  • 2 eggs
  • 1/3 of cup of sugar
  • 2 teaspoons of baking powder
  • 500 g of flour
  • 300 of jam

Pasta Flora Recipe – Instructions

  1. Start this pasta flora recipe by first making the dough. Take a bowl and sift the flour.  Create a small dip in the center of the flour and add the butter, sugar, egg, and salt. Knead with your hands until all ingredients become unified at least for 10 minutes to make a pliable but not sticky dough. You may need to add some tablespoons of cold water to achieve the desired result.
  2. Cover the dough in plastic wrap and allow to rest in the refrigerator for at least 30 minutes before proceeding with this Greek pasta flora recipe.
  3. Take the 2/3s of the dough and create a ball. On a floured surface roll the ball into a round.
  4. Take a baking pan, butter and flour its surface and place the round dough you have just created.
  5. Preheat oven to 350F degrees.
  6. Spread the jam over the dough. With the backside of a tablespoon try to even the jam at all places.
  7. Roll out the remaining dough to a thickness of 1/8″ and cut it into strips 1/2″ wide.
  8. Lay the strips across the jam in a lattice pattern.
  9. Place in oven and bake for around 30 minutes until the pasta flora gets a nice light golden color.
  10. Remove from oven and allow it to cool down before serving.
