Kourabiethes with Walnuts (Kourabiethes me Karidia)

As you may know by now, kourabiethes (also known as kourambiethes) is one of Greeks’ favorite Christmas cookies. Kourabiethes me karidia is an amazing variation to the traditional popular version you might have tasted as this one uses walnuts instead of almonds!  My aunt Vicky makes them every Christmas to treat family and friends and she is the one that shared this recipe.

To make kourabiethes me karidia, you need the following ingredients:  walnuts, semolina, breadcrumbs, eggs, sugar, butter, cognac, rose water and powdered sugar.

This kourabiethes with walnuts recipe is ideal if you are planning to throw a party on Christmas or New Year Eve as it gives around 100 pieces. It takes around one hour to prepare and 30 minutes to bake. Prepare yourself for something different, yet surprisingly mouthwatering, to what you expect!

Kourabiethes with Walnuts – Ingredients

  • 1 kg of walnuts, crushed
  • 2 small coffee cups of semolina
  • 1 small coffee cup of breadcrumbs
  • 5 eggs
  • 1 – 1 ½ teacups of sugar (around 200 – 300 g)
  • 1 teacup of butter (around 230 g)
  • 1 small coffee cup of cognac
  • Rosewater
  • Powdered sugar




Kourabiethes with Walnuts – Instructions

  1. Start this kourabiethes with walnuts recipe by taking an electric mixer bowl and add the sugar and butter. Stir around 10 minutes on medium-high speed until the mixture gets light and fluffy.
  2. Break the eggs and add them to the electric mixer bowl. Stir all the ingredients for a couple of minutes.
  3. Take a bowl and mix the crushed walnuts, semolina, breadcrumbs, and cognac. Add this to the eggs’ mixture.
  4. Mix the ingredients well at first with a spatula and then knead the mixture until it becomes crumbly.
  5. Cover the dough for around 30 minutes.
  6. Preheat oven to 350 degrees F. Take a baking pan and cover it with some parchment sheets.
  7. With a tablespoon, scoop out pieces of the dough and with the palms of your hands give it the shape you wish.
  8. Place the cookies on the baking pan.
  9. Bake until the cookies set and start to brown, about 25 to 30 minutes.
  10. Remove kourabiethes from the oven, and allow them to cool down.
  11. Place them on a plate, sprinkle them lightly with the rose water, and cover them with confectioners’ sugar.
