Revithia Recipe: A Traditional Greek Chickpea Soup

Although this revithia recipe has a long preparation process, it is absolutely worth the effort. As revithia is hearty and full of vitamins and fibers, this is one of my favorite soups especially when the weather is cold.

To cook this mouthwatering Greek chickpea soup, you will need chickpeas, onions, parsley, laurel, oregano, celery, Greek olive oil, lemon juice, salt, and pepper. Instead of the lemon juice, you can use fresh tomato. The night before you decide to cook revithia, put them in a bowl full of water in order to soak. Keep in the bowl for at least 12 hours.

But what makes this revithia soup so healthy? According to various health sites, chickpeas are full of nutrients, and protein, which is important for your bone, muscle, and skin health. Morevover, this hearty soup is ideal, if you are a vegeterian, vegan or you are just trying to on meat consumption, as a cup of chickpeas could provide almost one-third of your daily protein needs.

This real Greek revithia recipe, which serves 4 to 6 persons, takes 30 minutes to prepare and around 1 to 1 ½ hours to cook.

Revithia Recipe – Ingredients

  • 500 g of chickpeas
  • 2 – 3 onions, finely chopped
  • 1 bunch of parsley, finely chopped
  • 1 bunch of celery, finely chopped
  • One leaf of laurel
  • Oregano
  • 3/4 teacup of Greek olive oil
  • The juice of one lemon
  • salt
  • pepper




How to make – Instructions

  1. Start this Greek revithia soup recipe by placing the chickpeas in a bowl full of water the night before you decide to cook revithia.
  2. The next day, drain the chickpeas in a colander. Then, wash them well with fresh water. After washing them, put the chickpeas in a pot full of fresh water.
  3. Add the olive oil and the onions, parsley, celery, rosemary, oregano, salt, and pepper and boil over low temperature. Taste to see if additional salt is needed. Add to taste.
  4. Boil over medium temperature for around 1 to 1 ½ hours until chickpeas become tender. Add more hot water if necessary in order not to dry.
  5. Once ready, pour over the lemon juice.
  6. Serve hot in soup plates.
