  • 3 tablespoons of flat-leaf parsley, finely chopped
  • 3 tablespoons of mint, finely chopped 
  • 3 tablespoons olives, pitted, rinsed, and roughly chopped

For the dressing

  • 4-5 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon of lime
  • Salt 
  • Black pepper

Greek Watermelon and Feta Salad - How to Make

  1. Cut the watermelon into 2 cm cubes and put them in a bowl.
  2. Cut the feta into small cubes and add them to the bowl. 
  3. Add the red onion, parsley, mint, and olive oils, and stir by shaking the bowl so that the watermelon does not melt.
  4. In a small bowl combine the dressing ingredients and pour over the salad.
  5. Serve.  
I find eating karpouzi with feta with warm pita bread for a filling and satisfying meal. I use the pita bread to scoop up the watermelon and feta cheese for a fun and interactive eating experience.
