Vasilopita with Mandarin- Ingredients

  • 625 g of self-raising flour
  • 250 g of sugar
  • 200 g of butter
  • 90 ml of cognac
  • 3 eggs
  • 20 g of baking powder
  • The juice of 5 mandarins
  • The zest of 5 mandarins
  • Powdered sugar
  • One clean coin, wrapped in aluminum foil 

Vasilopita with Mandarin - How to Make

  1. Take a bowl and sift the flour.
  2. Preheat oven to 180 °C degrees.
  3. Grease well a baking pan with butter. 
  4. In another bowl and beat the butter with the sugar until the sugar is dissolved and the mixture is fluffy.
  5. Add the eggs one by one. Continue mixing. 
  6. Add the mandarin zest, mandarin juice, and cognac. Continue mixing until you get a soft, homogeneous dough.
  7. Place the coin in the pan and pour evenly the dough. 
  8. Bake in a preheated oven at 180 degrees for about 1 hour. 
  9. Remove when ready and allow to cool down.
  10. When cool, top with powdered sugar.
