Autumn's Sweet Pumpkin Pie Fusion: Greek Glikia Kolokithopita with Filo


 Glikia kolokithopita is the name of the Greek sweet pumpkin pie. There are various versions of this recipe. With or without phyllo dough. This sweet kolokithopita recipe is with phyllo dough and happens to be one of the best ones. This sweet pumpkin pie is easy, unique, and mouthwatering and will surprise your guests. You can serve it with coffee in the morning but also as a dessert after the meal!

To make this kolokithopita you need the following ingredients: phyllo dough, pumpkin, sugar, semolina, sun-dried golden raisins, butter, cinnamon, and powdered sugar. For this pumpkin pie dessert recipe, I always use a fresh pumpkin.    

This sweet kolokithopita recipe, which serves 10 persons, takes 60 minutes to prepare and 60 minutes to bake.

Sweet Kolothikopita (Pumpkin Pie) - Ingredients

  • 500 g of phyllo dough
  • 1.5 kg of pumpkin, grated
  • 200 g of sugar
  • 2 tablespoons of semolina
  • 200 g of sun-dried golden raisins
  • 375 g of butter, melted
  • Olive oil for greasing
  • Powdered sugar and cinnamon for serving


Sweet Kolokithopita (Pumpkin Pie) - How to Make

  1. Start this Greek sweet pumpkin pie recipe by cutting and removing the seeds from the pumpkin.
  2. Use a grater to grate the pumpkin or use the grater of the food processor
  3. Once grated, set aside in a colander until most of its liquids are gone. 
  4. Drain it well with the help of your hands
  5. Take a bowl and mix the pumpkin and all the other ingredients. Mix well until all ingredients are blended. 
  6. Take a cooking brush and generously grease with some olive oil in a baking pan.
  7. Lay one sheet of phyllo dough on your countertop and lightly brush it with some oil too.
  8. Spread along some of the pumpkin stuffing and wrap it.
  9. Twist it slightly to make a circle and place it in the baking pan.
  10. Follow steps 8 and 9. Take the wrapped phyllo dough and place it at the end of the first wrapped phyllo. Repeat until you have a big round pie.
  11. Sprinkle with a little water to make our pie crispier
  12. Bake in a preheated oven at 180 °C degrees on the heating elements for about 1 hour until our pie gets a nice golden brown color.
  13. Allow the kolokithopita to cool down.
  14. Top with powdered sugar and cinnamon before serving.
