Briam: A Traditional Greek Style Mixed Summer Vegetables Recipe

 This Greek briam recipe is a favorite summertime one. Like the French ratatouille dish, this Greek traditional vegan dish is so easy to make as the only thing you need to do is to mix some fresh summer vegetables, make some tomato sauce and bake them. And of course, there is the olive oil. Greeks like to use a lot of olive oil when they make briam, something that makes the vegetables very soft. No surprise briam falls under the traditional ladera dishes. 

Ladera (in Greek λαδερά) is a category of vegetable dishes cooked in olive oil in the Greek cuisine and it literally means "with olive oil". In general, ladera dishes consist of vegetables, plain or stuffed, cooked in a tomato, onion, garlic, and olive oil sauce. They usually do not contain meat which makes them the perfect vegan dishes. The secret, of course, is to use seasonal vegetables!

This authentic Greek briam recipe requires the following ingredients: potatoes, zucchini, eggplant, garlic cloves, onions, tomatoes, sugar, Greek olive oil, salt, and pepper. If you are a vegetarian, you can add some grated kefalograviera cheese!

You can enjoy briam on its own with feta cheese and bread. However, it can be a side dish to fish or meat. 


Briam - Ingredients

  • 3 medium potatoes, cut diagonally in thin slices.
  • 300 g of zucchini, cut diagonally in thin slices.
  • 1 medium eggplant, cut diagonally in thin slices.
  • 3 cloves garlic, crushed. 
  • 2 onions, cut in rings.
  • Freshly ground black pepper
  • ½ cup olive oil
  • 1 kg ripe tomatoes, skinned, seeded, and crushed.
  • 1 teaspoon sugar, 
  • Salt

Briam - How to make

  1. Start this authentic Greek briam recipe by sprinkling the eggplant slices with salt. Allow them to stand in a colander for 20 minutes. 
  2. Rinse eggplants under cold water, drain, pat dry with absorbent paper. 
  3. Sauté the potatoes, zucchini, eggplants, and garlic in oil. 
  4. Put the sautéed vegetables in an ovenproof dish. Add the salt, pepper, and sugar, and bake for 30 minutes at 190 C. 
  5. If necessary, add a little water. 
  6. Serve
Serve with briam with fresh bread and Greek feta cheese. You can eat this dish at room temperature. Enjoy!
