Mediterranean Magic: Crafting Fasolia Salata - A Traditional Greek Bean Salad Recipe

 I love beans. They are cheap, healthy, and full of fiber and protein. However, I don’t like eating bean soup when I am at work as it can become quite messy for me. If you are like me, this fasolia salata comes in handy to your everyday dietary program. Fasolia salata (φασόλια σαλάτα) or else salata me fasolia is the name of the Greek traditional bean salad. 

Beans are near the base of the Mediterranean Diet Pyramid which means it is ideal to consume them at least twice a week. It is not always easy to follow this. So, I usually prepare fasolia salata during weekends and I eat this healthy salad at least twice during weekdays.

Quite simple to prepare, this fasolia salata recipe requires the following ingredients: dried beans, onions, parsley, Greek olive oil, vinegar, salt, and pepper. It gives around 6 portions (400 calories per portion)

The fasolia salata recipe is ideal if you are a vegan or vegetarian as 100 grams of white beans provide around 9.7 grams of protein.

Fasolia salata – Ingredients

  • 500 g of small white dried beans
  • 2 large onions
  • 1 bunch of parsley
  • 2 cups of Greek olive oil
  • ½ cup of vinegar
  • Salt
  • Pepper

Fasolia salata – How to make

  1. Start this fasolia salata recipe by taking a pot and soaking the beans the night before you will make this Greek bean salad. 
  2. Replace with fresh water and bring to a boil.
  3. Boil well until the beans become soft for about 50 minutes.
  4. Strain them well.
  5. Cut the onions into fine slices.
  6. Chop up the parsley finely.
  7. Take a large bowl and put all the ingredients (beans, onions, parsley).
  8. Pour the Greek olive oil and vinegar and mix well.
  9. Add salt and pepper. Taste the salad and salt to taste. 
  10. Serve
