Rizogalo: A Traditional Greek Rice Pudding Recipe

Rizogalo usually requires milk, raw rice, sugar, eggs, cornstarch, lemon zest, and cinnamon. This is one of the healthiest desserts you can make. Rizogalo Recipe - Ingredients

  • 1/2 cup rice, preferably short-grain
  • 1 cinnamon stick
  • 2 cups water
  • 6 cups milk
  • 1 1/2 tablespoons cornstarch mixed with 
  •  2 tablespoons milk
  • 1/2 cup sugar
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • Ground cinnamon (for garnish)

Rizogalo Recipe - How to Make

  1. Start this authentic rizogalo recipe by combining rice, cinnamon stick, and water in a pan and bring to a boil. 
  2. Lower the heat and simmer after covering the pan for around 15 minutes.
  3. Add the milk, cornstarch mixture, and sugar to the pan. 
  4. Increase the heat to moderate and constantly stir for around 15 minutes until the mixture thickens.
  5. Add lemon zest, and vanilla extract and stir to combine. 
  6. Spoon into individual serving bowls or glasses and refrigerate for at least 2 hours.
