Gigantes Plaki: A Traditional Greek Lima Beans Recipe

Today, I decided to make some gigantes plaki sto fourno which is the Greek name of baked lima beans. Lima beans have a gentle flavor and can you can cook them in many ways. They are also called “butter beans” because of their starchy and buttery texture. This is a Greek lima beans recipe my sister shared with me. She makes the best lima beans I have ever tasted!

Lima beans are not delicious. They are also good for your health. They are a good source of cholesterol-lowering fiber. Their high fiber content prevents blood sugar levels from rising too after a meal. This makes these beans a good choice for individuals with diabetes, insulin resistance, or hypoglycemia. You can enjoy this gigantes plaki dish hot or cold. You can also add them to your salad.

Gigantes Plaki – Ingredients

  • 1 kg of dry Lima beans
  • 1 cup of Greek olive oil
  • 1/3 cup of parsley, chopped
  • 1 tablespoon of tomato sauce
  • 5 garlic cloves, finely chopped
  • 1 tablespoon of celery, chopped
  • 3 medium-sized dry onions, chopped
  • Salt
  • Pepper
  • 2 cups of water

Gigantes Plaki – How to Make

  1. Start this gigantes plaki sto fourno by washing the lima beans well. 
  2. Put them overnight in cold water to soak.
  3. The next day, rinse them well. Place them into a saucepan with cold water.
  4. Add some salt. Boil for about 45 minutes.
  5. Remove from heat and drain them.
  6. Meanwhile, put oil in a saucepan, add onions and garlic. Stir until ingredients are browned.
  7. Mix tomato sauce with 1-2 cups of water. Add it to the saucepan
  8. After tomato paste and other ingredients are boiled, add celery, parsley, some salt, and pepper. Let it boil for around 10 minutes.
  9. Spread out the lima beans in a pan or an ovenproof dish. Add tomato sauce from the saucepan.
  10. Preheat your oven to 400 °F. This is around 200 degrees °C.
  11. Mix ingredients well and bake lima beans in a moderate oven. Add 1 to 2 cups of water.
  12. Periodically, carefully stir with a spoon. If necessary, add some hot water so they are not dried out.
  13. Add more salt to taste if needed.
  14. Roast beans until they begin to slightly brown.
