Tiropsomo: A Traditional Greek Cheese Bread Recipe

If you like eating bread, you will totally love tiropsomo. This traditional Greek cheese bread recipe is just delicious as you can enjoy it any time of the day! To make it, I usually use feta cheese which gives to tiropsomo a nice salty flavor! But you can always be adventurous and experiment with any type of Greek cheese. This tiropsomo recipe will take you around 45 minutes to prepare and 30 minutes to bake. The whole process, however, may take more than three hours.


Tiropsomo – Ingredients

  • 450 g of white flour
  • ½ teaspoon of dry yeast
  • 1 ¼ teacup of lukewarm water
  • ½ tablespoon of honey diluted in water
  • ½ teaspoon of salt
  • 2 tablespoons of Greek olive oil
  • 250 g feta cheese crumbled, plus 75 g for topping (also crumbled)
  • 2 tablespoons of kefalotiri, grated
  • ½ teaspoon oregano, optional
  • 1 egg, optional

Tiropsomo – Instructions

  1. Start this tiropsomo recipe by dissolving the yeast in ½ cup of lukewarm water. Add some flour and the dissolved honey and stir until ingredients become a thick porridge. Cover it, place it in a warm place for around 30 minutes to double its size.
  2. Sift the flour into a bowl and sprinkle the salt evenly over it. Create a small dip in the center of the flour and add the egg, oil, remaining water as well as the mixture of the dissolved yeast.
  3. Knead with your hands until all ingredients become unified at least for 10 minutes to make a pliable but not sticky dough. If dough sticks in your hand, add some more flour.
  4. Put it back in the bowl, cover it with clean kitchen towel film, put it in a warm place for at least 2 hours and allow it rise to double its size.
  5. Knead again and add the cheeses.
  6. Take a baking pan and grease it with olive oil. Place the dough in it and flatten it with your hands so it covers the whole baking pan. Place it in a warm position for another 60 minutes. You don’t need to cover it now.
  7. Brush the edges well with the olive oil
  8. Sprinkle some crumbled feta cheese evenly over the tiropsomo, pressing it in with your fingers.
  9. Sprinkle the oregano over it (optional)
  10. Preheat oven to 374°F. Bake tiropsomo for around 30 minutes until its surface gets a nice golden brown color.
