Skordalia Recipe: An Authentic Greek Garlic Dip Recipe

Skordalia is a popular Greek traditional dip. It is usually made by combining crushed garlic with mashed potatoes, lemon juice, parsley, salt, and pepper. But, you can also make skordalia with stale bread soaked in water. Either way, you make this garlic dip, it is delicious! This skordalia recipe with potatoes is a great vegetarian dip!

Skordalia is usually served with batter-fried fish, grilled meats, fried, boiled or raw vegetables. It can be enjoyed as a dip or even as a cold appetizer. If you ask me, I like to eat it with hot bread!

This delicious skordalia recipe with potatoes is quite easy. The only thing that takes time is boiling the potatoes. This depends on potatoes’ size and quality. The general rule is that potatoes are done when you can slide the tip of a knife all the way through without resistance. It’s also important to drain the potatoes immediately after cooking. Don’t let them in water while you prepare the rest of the meal. Once you boil, peel and cut the potatoes, you are almost done. I almost forgot!

Skordalia Recipe

Skordalia Recipe – Ingredients

  • 4 medium potatoes, boiled, peeled, and cut into four pieces
  • ½-¾ teaspoon of salt
  • 1/4 teaspoon of pepper
  • 4 cloves of garlic, finely chopped
  • Juice of ½ lemon
  • 1 cup of Greek olive oil
  • Parsley, chopped

Skordalia Recipe – Instructions

  1. Start this skordalia recipe with potatoes by taking a blender and place the boiled potatoes, chopped garlic, chopped parsley, lemon juice, salt, and pepper.
  2. Blend on low speed. Slowly add olive the olive oil.
  3. Continue blending mixture until all ingredients become smooth without lumps.
  4. Taste to see if additional salt is needed. Add to taste. Blend again.
  5. Take a bowl and pour in the skordalia.
  6. Cover the bowl and refrigerate for at least two hours.
  7. Serve.
