Rizogalo: An Easy Traditional Greek Rice Pudding Recipe

Flavored with vanilla and garnished with cinnamon, rizogalo, one of my favorite sweets, is a delicious traditional Greek rice pudding dessert. This rizogalo recipe which is just ideal for your kids is easy and requires no cooking skills!

When my wife was pregnant with our daughter, she was eating rizogalo literally all the time! I really like making my food instead of buying it. So instead of buying it, I wanted to make it by myself. In my effort to make it as healthy as possible, I tried many quite many recipe versions. The one I am just about to share is one of the best ones I have ever tasted. This rizogalo recipe requires milk, sugar (or even better stevia), water, rice, cornstarch, salt and vanilla flavor. And don’t forget cinnamon!

Cinnamon is one of my favorite food ingredients. Seems like not only it adds a special flavor to your food, but it is also good for your health. According to a small research, I did on the internet, cinnamon can improve your sensitivity to insulin.  Insulin is one of the hormones that regulate metabolism and energy use. It is essential for the transport of blood sugar from the bloodstream into cells. Unfortunately, many people are resistant to insulin’s effects. Well, the good news is that cinnamon can dramatically reduce insulin resistance, helping this incredibly important hormone to do its job. Cinnamon is also well known for its blood sugar lowering effects. Hence, it can lower blood sugar by several other mechanisms*.

This rizogalo recipe serves 10 persons. It takes only 15 minutes to prepare and around 40 to 45 minutes to cook.

Rizogalo – Ingredients

  • 1 cup of long-grain white rice
  • 1 cup of water
  • 8 cups of milk
  • 1 teacup of white sugar (or stevia equivalent quantity)
  • 4 teaspoons of cornstarch
  • ½ teaspoon of vanilla
  • ½ teaspoon of salt
  • Ground cinnamon for garnish




Rizogalo – Instructions

  1. Start this rizogalo recipe by dissolving the cornstarch into a ½ teacup of milk. Place aside.
  2. Wash rice well with fresh water and allow it to drain.
  3. Take a pot and add the water and salt. Bring to boil over high heat.
  4. Add the rice. Cover the pot and simmer rice until all water is absorbed.
  5. Take a large pot. Add the remaining milk and the sugar. Stir until sugar is dissolved and allow to simmer.
  6. Add the rice and vanilla. Let rizogalo to simmer at medium to low temperature until rice becomes soft.
  7. Now, add the dissolved cornstarch to the pot. Stir constantly until the mixture thickens.
  8. Remove pot from heat. Place rizogalo into a big glass bowl or spoon into individual dessert bowls.
  9. Allow rice pudding to cool for 10 minutes.
  10. Cover rizogalo and place in refrigerator.
  11. Garnish with a sprinkling of ground cinnamon before you serve.
