Pesto Sauce For Pasta

After all the meat I ate during these holidays, I am like in a detox mood.  Today, I wanted to eat pasta.  But, I didn’t know what sauce to make. Then, I remembered that I have planted some basil in my small balcony garden last summer! That was it! I was going to make some pesto sauce for pasta! Pesto is one of the most popular sauces of Mediterranean cuisine.  This pesto sauce recipe is for 4 persons. Preparation time is around 20 minutes. If you like, however, you can prepare more pesto sauce for future use. To keep it fresh for many days, place it in a sealed glass jar and keep it refrigerated. My mother (the best cook in the world :-)) says that if you want the basil leaves to preserve their beautiful green color, it is preferred to make this pesto sauce for pasta the traditional way. I had to ask her what she meant by saying “the traditional way”. Apparently, you need to make it by using a mortar and pestle. You start with some basil leaves, the pine nuts, and some olive oil. Then, gradually you add the rest of the ingredients. Either way, you prefer to make it, this pesto sauce is delicious!

Pesto Sauce For Pasta – Ingredients

  • 1 teacup of fresh basil leaves
  • 80 g of Parmesan, grated
  • 50 g of pine nuts
  • 1 cup of Greek olive oil
  • 1 garlic clove
  • Salt
  • Black pepper

Pesto Sauce For Pasta – Instructions

  1. Wash well the basil leaves under fresh water.
  2. Dry them with a clean kitchen towel.
  3. Take a food blender.
  4. Add to the blender the following: Parmesan, pine nuts, garlic clove and half of the olive oil.
  5. Lightly blend until all ingredients become a unified mixture.
  6. Stop blending the ingredients and add the rest of olive oil.
  7. Stir for one more minute.
  8. Add salt and pepper. Taste sauce to see if additional salt is needed. Add salt to taste.
