Kormos Christougenniatikos: A Greek Christmas Yule Log Cake

Kormos Christougenniatikos (Κορμός Χριστουγεννιάτικος) is the name of the Greek Christmas yule log cake. This dessert is quite impressive and ideal for the holidays. Easy to make, once you try it, it will become your favorite Christmas dessert. In order to make it, you need the following ingredients: eggs, sugar, flour, whipping cream, cocoa, powdered sugar, almonds, couverture, cognac, and butter. This Kormos Christougenniatikos recipe will take 1 1/2 hours to prepare, but you need to refrigerate it for around 4 to 5 hours before serving.

Kormos Christougenniatikos – Ingredients

For the cake

  • 6 eggs
  • 125 g of sugar
  • 125 g of flour

For the filling

  • 500 ml of whipping cream
  • 2 tablespoons of cocoa
  • 1/2 teacup of powdered sugar
  • Αlmonds, peeled

For the icing

  • 140 g of couverture
  • 1/2 of teacup of whipping cream
  • 2 tablespoons of cognac
  • 1 tablespoon of butter

Kormos Christougenniatikos – Instructions

  1. Preheat oven to 428°F. Break the eggs and separate the whites and yolks. Beat the egg whites into meringue and add 1-2 tablespoons of sugar. Beat egg yolks with the remaining sugar until the mixture is light and fluffy.
  2. Add the flour in the yolk mixture and then add the meringue and gently stir. Take a swiss roll tin and cover it with baking parchment. Pour the mixture and bake it for around 10 minutes.
  3. Remove the cake from the oven and place it on a clean kitchen towel, remove the baking parchment and roll in a role. Allow to cool down.
  4. Add the whipping cream into a mixing bowl, add the powdered sugar and cocoa. Mix at high speed. Add the almonds and continue mixing.
  5. Carefully unroll the cooled cake. Place the filling mixture and with a spatula evenly spread it. Roll it again.
  6. Melt the couverture with the whipping cream. Remove the heat and add the butter and cognac. Pour the couverture mixture over the log. With the help of a fork, make it look like real wood.
  7. Refrigerate for around 4-5 hours and serve.
