Kolokithokeftethes Recipe: Traditional Greek Zucchini Fritters

I recently visited a tavern in Sofiko Korinthias with friends and family. The owner of the restaurant was a kind young man, one of the Greek guys that remind you some much of the past! One of the starters we ordered were kolokithokeftedes. They were so delicious and the reminded me the ones that my mother makes. Right after we left the tavern, I phoned my mother to get her infamous kolokithokeftedes recipe! So, what is kolokithokeftedes? It is the name of the traditional Greek zucchini fritters. Remember their name because once you try them, they will become your favorite vegan appetizer that you could perfectly eat while you drink ouzo or beer.

For this authentic kolokithokeftedes recipe, you need the following ingredients: zucchini, dill, flour, eggs, mint, Greek feta cheese, olive oil, salt, breadcrumbs, and pepper. I got this traditional Greek zucchini fritters from my mother. She still makes us kolokithokeftedes any time she happens to find this vegetable. The kolokithokeftedes she makes are so big in size that they are not actually appetizers. They are more like a regular meal! Anyway, you can make them as big or as small as you wish. I usually enjoy kolokithokeftedes with some tzatziki or any other yogurt dip.

This kolokithokeftedes recipe serves 4 to 5 persons and takes 30 mins to prepare and 25 mins to cook. However, I suggest you place the dough in the refrigerator for at least one hour before you start making the kolokithokeftedes.

Kolokithokeftedes Recipe – Ingredients

  • 5 large zucchini, washed and grated
  • 1 onion, finely chopped
  • 2 large eggs
  • 1 cup of breadcrumbs
  • 1½ cups of Greek feta, crumbled
  • 2 tablespoons of dill, chopped
  • ¼ cup of fresh parsley, finely chopped
  • ½ cup of all-purpose flour
  • ½ cup of extra virgin olive oil
  • 1 teaspoon of sea salt, divided
  • ½ teaspoon of freshly ground black pepper

Kolokithokeftedes Recipe – Instructions

  1. Start this kolokithokeftedes recipe by taking a colander. Place grated zucchini in a colander. Sprinkle zucchini with salt. Cover colander and let the mixture sit for one hour. Allow all excess moisture to drain from zucchini by squeezing from time to time.
  2. Take a bowl and add the drained zucchini with the breadcrumbs, eggs, onion, dill, parsley, and feta. Mix ingredients well. Add salt and pepper.
  3. Stir until dough comes tight. If the dough is loose to form patties, you need to add more breadcrumbs.
  4. When you get the right consistency, cover the bowl and refrigerate for one hour.
  5. Form patties into 4-inch fritters. Lightly dredge in flour.
  6. Take a large pan. Add oil. Bring oil to boil over medium-high heat.
  7. Fry until golden brown, turning once with a spider or slotted spoon about 2-3 minutes per side.
  8. Take a platter and place some absorbent paper. Place Greek zucchini fritters for 1 minute so excess oil is absorbed.
  9. Serve hot with tzatziki.
