Greek Pie Recipes

Today is National Pie Day! This may be my most favorite day of the year after Christmas!! In order to celebrate this day, I have gathered all my favorite Greek pie recipes!

Greek Pie Recipes

Greek Pie Recipes No 1: Spanakopita

Ingredients

  • 900-1000 g of fresh spinach (or 2 packages of 10-oz.frozen chopped spinach)
  • ¼ cup of Greek olive oil
  • ½ cup of green onions, chopped
  • ¼ cup of fresh parsley, chopped
  • 2 table spoons of fresh dill, chopped
  • 4 eggs
  • 50 g of feta cheese, crumbled
  • ¼ table spoon of salt
  • ½ tablespoon of pepper
  • ¾ cup of melted butter
  • 14-16 phyllo dough sheets
  • 1 table spoon of sesame seeds (optional)

Instructions

  • Allow phyllo dough to cool down to room temperature.
  • If you are using fresh spinach, first try to remove the large and tough stems from spinach leaves. Then, carefully, wash spinach leaves in cold water. Squeeze water with hands and allow it to dry.
  • If using frozen spinach, allow it to defrost. Place it in a strainer and squeeze out any excess moisture with the back of a large spoon.
  • Preheat oven to 350 °F.
  • Heat olive oil in a large frying pan over medium-high heat. Add green onions and cook for around 5 minutes. Stir constantly.
  • Add spinach and cook for 3 more minutes.
  • Add in the pan the parsley, dill, eggs, feta cheese, salt, nutmeg and pepper.
  • Cook for 3 more minutes while stirring well.
  • Remove pan from heat. Let it cool for around 5 minutes.
  • Take a pan (ideal size 9X13). Butter it.
  • Place one sheet of phyllo dough in the pan and brush it with butter. Repeat the same until you place around 7-8 sheets.
  • Evenly pour the spinach filling over phyllo with skimmer. Try to drain excess oil before pouring.
  • Trim off dried edges of phyllo with a sharp knife.
  • Fold excess phyllo over the spinach filling.
  • Take one sheet of phyllo dough. Top the spinach filling. Brush it with butter. Repeat the same until you place around 7-8 sheets.
  • Trim off dried edges of phyllo with sharp knife. Butter the top phyllo dough.
  • Sprinkle with sesame seeds (optional).
  • Place pan on middle oven rack.
  • Bake for around 45 minutes or until crust is golden.
  • Allow spinach pie to cool for 10 minutes.
  • Cut into square pieces and serve.

 

Greek Pie Recipes No 2: Tiropita

Ingredients

  • 1 package of phyllo dough (must be in room temperature)
  • 600 g of Greek feta cheese
  • 100 g of grated gruyere cheese (Greek graviera)
  • 3 tablespoons of fine semolina
  • 1 cup of milk
  • 3 eggs
  • 4 tablespoons of fresh mint
  • 1 cup of Greek olive oil

Instructions

  1. Take a large bowl. Put the feta cheese and crumble it with a fork.
  2. Into a separate bowl, beat the eggs. Then, add the milk and grated gruyere cheese and mix it well.
  3. Add the mixture to the bowl with the feta cheese.
  4. Then, add the chopped mint, some pepper and sprinkle with semolina. Stir well the mixture.
  5. Preheat oven at 350 °F .
  6. Take a cooking brush and generously grease with some olive oil a baking pan.
  7. Lay one sheet of phyllo dough on your counter top and lightly brush it with some oil too.
  8. Spread along some of the cheese stuffing and wrap it.
  9. Twist it slight in order to make a circle and place it the baking pan.
  10. Follow the steps 8 and 9. Take the wrapped phyllo dough and place it to the end of the first wrapped phyllo. Repeat until you have a big round pie.
  11. Pour some some oil over feta cheese pie.
  12. Spray the pie with some water. Place it in the oven.
  13. Cover it with some wax paper.
  14. Remove wax paper after 45 minutes.
  15. Continue baking until the Greek feta cheese pie gets a golden brown color.
  16. Allow to cool down for 5 minutes
  17. Serve.

 

Greek Pie Recipes No 3: Tiropita with Greek Yogurt

Ingredients

  • 4 pieces of phyllo dough
  • 4 large eggs
  • 400 gr of zero fat Greek yogurt
  • 120 gr of Greek feta cheese
  • 120 gr of cottage cheese
  • 1 table spoon of Greek olive oil
  • Pepper
  • Salt (Feta cheese is usually salty. So, you need to be careful with how much salt you add)

Instructions

  1. Preheat oven to 392 F.
  2. Take a large bowl.
  3. Add yogurt, feta, cottage, olive oil and pepper to bowl. Stir well the mixture.
  4. Taste mixture to see if salt is needed. Add to taste. Mix again.
  5. Cut the 4 pieces of phyllo dough into smaller pieces. Add them to the mixture.
  6. Gently stir the mixture.
  7. Take a baking pan.
  8. Oil or butter the pan.
  9. Add the mixture to baking pan.
  10. Place at oven.
  11. Bake for 25-30 minutes.
  12. Allow it to cool down before cutting into pieces.
  13. Serve.

Greek Pie Recipes No 4: Sweet Pumpkin Pie

Ingredients

  • 1 medium size pumpkin, peeled, un seed and grated
  • 1 cup of soya
  • 3 tablespoons of fennel, chopped
  • 375 g of flour
  • 3 eggs
  • 4-5 pieces of phyllo dough, unfreeze
  • 3 water glass of fresh milk
  • 6 tablespoons of sugar, divided
  • 2 tablespoons of cinnamon
  • Half water glass of Greek olive oil

Instructions

  1. Take a bowl. Place grated pumpkin and cover it.
  2. Boil one cup of soya (follow package instructions).
  3. Allow soya to completely cool down.
  4. Drain soya from any water.
  5. Place soya into a bowl.
  6. In another bowl, squeeze grated pumpkin with your hands. Keep the juice.
  7. Add squeezed pumpkin to soya. Add fennel and one table spoon of sugar. Stir well ingredients.
  8. Beat the eggs and add them to pumpkin juice. While stirring add the milk, flour and 3 tablespoon of sugar. Dough should not be neither tight nor loose.
  9. Taste dough to see if more sugar is needed.
  10. Preheat oven to 200 οC.
  11. Take a baking pan (around 22 cm diameter).
  12. With a cooking brush, oil its base.
  13. Place 4-5 phyllo dough generously oiling each phyllo as you place it.
  14. Add pumpkin mixture over phyllo dough. Cut the excess phyllo dough.
  15. Evenly top with dough mixture. Sprinkle with two tablespoons of sugar and cinnamon.
  16. Carefully add oil over pie edges.
  17. Bake for around 40-45 minutes, until pumpkin gets a lightly golden brown color.
  18. Allow pumpkin pie to cool down for 10-15 minutes before cutting into pieces.
  19. Serve.

Greek Pie Recipes No 5: Yogurt Pie

Ingredients

  • 2 ½ cups of fine semolina (400 g)
  • 5 big eggs
  • 1 ¼ cups of sugar (225 g)
  • 500 g of Greek yogurt
  • ½ cup of well chopped almonds (60 g)
  • 2 teaspoons of baking powder (10 g)
  • The zest of half of a lemon
  • 1 dose of vanilla flavor
  • 1/4 of teaspoon of salt

Recipe Syrup – Ingredients

  • 3 ½ cups of sugar (630 grams)
  • 3 cups of water (570 grams)
  • Two lemon slices
  • 1 dose of vanilla flavor
  • 1 cinnamon stick

Instructions

  • Preheat oven at 392 °F
  • Take a bowl and put the eggs, sugar, vanilla, lemon zest, baking powder and salt.
  • Stir well the ingredients.
  • Add Greek yogurt.
  • Again, stir well ingredients until they become a homogeneous mixture.
  • Now, add fine semolina and almonds.
  • Take a baking pan (around 25 cm diameter).
  • Grease baking pan with some butter. Sprinkle it with some fine semolina.
  • Put the mixture into the pan. Bake it for around 35-40 minutes.
  • For the syrup, put all the ingredients into a pot.
  • Let them boil well for about 10 minutes.
  • Take Greek yogurt pie out of the oven.
  • Pour the warm (but not hot) syrup to hot Greek yogurt pie
  • Allow pie to cool down.
  • Cut into pieces and serve.
