Gigantes Plaki: A Traditional Greek Giant Beans Recipe

To make this gigantes sto fourno (the Greek words to describe a food that is cooked in an oven), you need the following ingredients: Greek giant beans, olive oil, parsley, tomato sauce, garlic cloves, celery and dry onions. To get the most out of this recipe, try to find dried gigantes beans at Greek stores. If you can’t, you can easily use lima beans instead.

Gigantes have a gentle flavor and can be cooked in many ways. They are not just delicious. Just like the rest of beans, they are good for your health as they are a good source of cholesterol-lowering fiber.

You can eat gigantes sto fourno warm or cold, either as a great vegetarian meal or as a delicious appetizer! You can also add them to your salad! I got this gigantes plaki recipe from my sister. She makes the best lima beans I have ever tasted! This gigantes sto fourno recipe serves six people.

Gigantes Plaki

Gigantes Sto Fourno – Ingredients

  • 1 kg of Greek Giant beans
  • 1 cup of Greek olive oil
  • 1/3 cup of parsley, chopped
  • 1 tablespoon of tomato paste
  • 5 garlic cloves, finely chopped
  • 1 tablespoon of celery, chopped
  • 3 medium-sized dry onions, chopped
  • Salt
  • Pepper
  • 2 cups of water


Gigantes Sto Fourno – Instructions

  1. Start this gigantes plaki recipe by washing the lima beans well. Put them overnight in cold water to soak.
  2. The next day, rinse them well. Place them in a saucepan with cold water.
  3. Add some salt and boil for about 45 minutes.
  4. Remove from heat and drain them.
  5. Meanwhile, put oil in a saucepan, add the onions and garlic and stir until ingredients are browned.
  6. Mix tomato paste with 1-2 cups of water. Add it to the saucepan
  7. After tomato paste and other ingredients are boiled, add celery, parsley, some salt, and pepper. Let it boil for around 10 minutes.
  8. Spread out the lima beans in a pan or an ovenproof dish. Add tomato sauce to the saucepan.
  9. Preheat your oven to 400°F. This is around 200°C.
  10. Mix ingredients well and bake lima beans in a moderate oven. Add 1 to 2 cups of water.
  11. Periodically, carefully stir with a spoon. If necessary, add some hot water so they are not dried out.
  12. Add more salt to taste if needed.
  13. Roast gigantes until they begin to slightly brown.
