Fasolada Recipe: A Traditional Greek Bean Soup Recipe

Fasolada (φασολάδα) is the name of the Greek bean soup. This authentic fasolada recipe is one of my favorite winter soups. Fasolada is one of the healthiest Greek traditional foods as white beans offer extraordinary health benefits. They are loaded with antioxidants and they combine proteins, fat, and carbs in a balanced way. They are also a good source of fiber and rank low on the glycemic index. They help regulate fat storage in the body. White beans also deliver a good supply of magnesium, a mineral with multiple health benefits.

To make this traditional fasolada recipe you need the following ingredients: white beans, tomato sauce, carrots, celery, onion, olive oil, salt, and pepper.

This fasolada recipe requires, however, a small preparation to make. The night before you decide to make this Greek bean soup, place the beans in a saucepan, fill it with cold water and allow them to soak overnight. Besides that, this easy bean soup recipe will take you around 30 minutes to prepare and 60 minutes to cook.

This fasolada recipe serves 4 persons and is ideal if you are a vegetarian. In case you are making this Greek bean soup for your kids, I advise you blend the carrots, celery, and onion.

Fasolada Recipe – Ingredients

  • 500 g of dry white beans
  • 2 tablespoons of tomato sauce
  • 2-3 carrots, finely chopped
  • 3 stalks of celery, finely chopped
  • 1 large red onion, finely chopped
  • 1 teacup of Greek olive oil
  • Salt
  • Freshly ground pepper

Fasolada Recipe – Instructions

  1. Start this traditional fasolada recipe by placing the white beans in a saucepan with water. Allow them to soak overnight.
  2. Drain the beans in a colander.
  3. Take a saucepan and fill it with water. Bring to boil over medium heat and add the beans.
  4. Add the carrots, celery, onion and tomato sauce
  5. Turn the heat down to medium and simmer until white beans are tender. Boiling time depends on the quality of the white beans.
  6. Just before you remove saucepan from heat, add the olive oil and simmer with salt and pepper.
  7. Boil for a few more minutes, until the soup becomes thick and creamy.
  8. Taste to see if additional salt is needed. Add to taste.
  9. Serve.
