Authentic Skordalia Recipe: How to make garlic sauce with bread

Skordalia is a traditional garlic dip. Most of the Greeks associate it with 25th of March, our national Independence Day. On that day, Greeks eat skordalia with fried cod (bakaliaros tiganitos). But, this Greek garlic sauce is so delicious that you can enjoy it every day of the year. Especially if you are a garlic lover!  But, how do you make skordalia?

In general, to make Greek skordalia, you need to combine crushed garlic with a bulky base which may be potatoes purée or liquid-soaked stale bread. Then, you need to add olive oil and often vinegar to make a smooth emulsion. This authentic skordalia recipe is a bread-based skordalia recipe.

To make this Greek traditional skordalia recipe, you need the following ingredients: garlic, breadcrumbs, Greek olive oil, vinegar, parsley, olives, salt, and pepper.

You can enjoy skordalia with fried codfish, fried vegetables and boiled vegetables or even eat it like a dip. Try it with baked bread and you will remember me! This easy authentic skordalia recipe, which also resembles garlic butter sauce, is healthy, easy, delicious and ideal for vegetarians.

Authentic Skordalia Recipe – Ingredients

  • 1 whole garlic
  • 2 cups of breadcrumbs
  • 2 cups of Greek olive oil
  • ½ cup of vinegar
  • ½ parsley bunch
  • 4 Greek olives (in vinegar)
  • Salt (to add taste)
  • Pepper (to add taste)

Authentic Skordalia Recipe – Instructions

  1. Start this authentic skordalia recipe by soaking the breadcrumb in some water.
  2. Squeeze well the breadcrumb until you fill up two cups.
  3. Clean garlic, cut it into smaller pieces and mash it well in a mortar with a pestle. You can always use a blender in case you don’t have a mortar.
  4. Add little by little the bread crumbs into the mortar and hit mixture with a pestle the bread crumbs and garlic become like a cream.
  5. Add some salt and pepper.
  6. Add some olive oil and vinegar.
  7. Keep mixing ingredients in the mortar with the pestle until you have used all of them.
  8. Taste garlic sauce to see if more salt and pepper is needed.
  9. If you add more salt, stir Greek garlic dip again.
  10. Take a bowl.
  11. Place garlic sauce in the bowl.
  12. Garnish skordalia with the Greek olives and parsley.
  13. Serve.
