This mouthwatering dish, ideal for any time of the year and occasion, stands perfectly as a main course or an appetizer! However, there are some steps you need to do to prepare these lamb souvlaki. First of all, ask your butcher to cut the leg of lambs into cubes. Then, soak the kebab sticks in water for at least 20 minutes. This will prevent them from getting burned. Authentic Greek Lamb Souvlaki Recipe – Ingredients

  • 1 leg of lamb, cut into 1½-inch cubes
  • 1 tablespoon of salt
  • 2 teaspoons of black pepper
  • 1 garlic clove, minced
  • 15 shish kebab sticks
  • ½ of a cup of Greek virgin olive oil
  • The juice of 2 fresh lemons
  • 1 tablespoon dried oregano

Authentic Greek Lamb Souvlaki Recipe – Instructions

  1. Start this authentic Greek lamb souvlaki recipe by carefully washing the lamb under fresh water. Put the meat aside and allow draining.
  2. To make the lamb souvlaki marinade, take a large bowl and add the Greek olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Stir well the ingredients. Taste to see if any additional ingredient is needed. Add to taste.
  3. Place the lamb cubes into the bowl with the marinade. Mix the lamb cubes well. I suggest letting the seasoned lamb rest for 15 minutes at room temperature before proceeding. Cover the bowl and place it in the refrigerator. Allow lamb to absorb the marinade for at least 60 minutes.
  4. In the meantime, cut the wooden skewers in order to adjust to your grill. As mentioned, ideally you should soak the skewers as this would prevent them from burning.
  5. Now, it is time to assemble the lamb souvlaki: Spear about 5 pieces of lamb onto each soaked shish kebab stick. I suggest you start threading the lamb cubes at the bottom and continue up to the top of each skewer. Add any vegetable of your choice to give more flavor (optional).
  6. With a pastry brush, baste each kebab with the lemon juice mixture, being sure to coat each side of the meat.
  7. Preheat your grill on high heat. Put the lamb on the grill. Cook the lamb on the grill for 10 minutes total, turning every couple of minutes until browned on all sides.
  8. Remove from heat when done.
  9. Serve with pita and tzatziki.
